High-Protein Pizza Crust Recipe: An Easy Alternative for Pizza Night

Pizza night doesn't have to disappear just because you're trying to eat more protein.

In fact, one of our favorite ways to make pizza at home skips traditional pizza dough entirely.

Instead, we make the crust from ground chicken or turkey, eggs, Parmesan cheese, and Perry Spices Pizza Spice.

The result is a savory, protein-packed crust that you can load with your favorite sauce, cheese, and toppings—and it's become a staple in our kitchen.

If you're looking for a high-protein pizza crust that's simple to make and actually tastes good, here's exactly how we make ours.

 

What Is High-Protein Pizza Crust Made Of?

There are plenty of versions of protein pizza crust online. Some use cottage cheese, Greek yogurt, protein powder, or specialty flours.

Ours is even simpler.

You only need:

  • 2 lbs ground chicken or turkey
  • 2 whole eggs
  • 1 cup Parmesan cheese
  • 2–3 tablespoons Perry Spices Pizza Spice
  • Salt and pepper to taste

That's it for the crust.

The ground poultry creates the protein-rich base, while the eggs and Parmesan help bind everything together. Pizza Spice brings in the Italian-inspired flavor you'd expect from pizza before we've even added the toppings.

How to Make High-Protein Pizza Crust

1. Preheat your oven

Preheat the oven to 400°F.

2. Make the crust mixture

Add the ground chicken or turkey, eggs, Parmesan cheese, Perry Spices Pizza Spice, salt, and pepper to a large bowl.

Mix everything thoroughly until evenly combined.

3. Form the crust

Transfer the mixture onto a baking sheet.

Spread it into a thin, even layer, keeping the thickness as consistent as possible so the crust cooks evenly.

4. Bake for 25 minutes

Bake the crust at 400°F for approximately 25 minutes.

Once it's cooked through, remove it from the oven and allow it to rest for a few minutes.

Don't skip the rest. Giving the crust a few minutes to set makes it easier to add your toppings without disturbing it.

5. Build your pizza

Now comes the fun part.

Add your favorite:

Pizza sauce → cheese → protein → vegetables → whatever else belongs on pizza in your house.

There are no pizza police here.

6. Bake again

Increase the oven temperature to 425°F.

Return the pizza to the oven for approximately 10 minutes, or until the cheese is melted and bubbly and your toppings are cooked to your liking.

Slice and serve.

Does a Chicken Pizza Crust Actually Taste Like Pizza?

Let's set realistic expectations.

A crust made from ground chicken isn't going to taste exactly like traditional flour-based pizza dough.

And that's okay.

Rather than trying to perfectly imitate bread, this crust creates a savory base for all of the things that make pizza taste like pizza: tomato sauce, melted cheese, Italian herbs, seasonings, and your favorite toppings.

That's also why seasoning the crust itself matters.

Ground chicken and turkey are relatively mild. If you make the crust without much seasoning, you're missing an opportunity to build flavor from the bottom up.

We use 2–3 tablespoons of Perry Spices Pizza Spice directly in the crust mixture so the flavor isn't limited to whatever you put on top.

Can I Use Ground Turkey Instead of Chicken?

Absolutely.

We've made this recipe with ground chicken or ground turkey, and either works.

The flavor and texture may vary slightly depending on the meat and fat content you choose, but you don't need to completely change the recipe.

How Do You Keep Protein Pizza Crust From Getting Soggy?

There are a few things that help.

First, spread your crust thin and evenly. An overly thick center can retain more moisture.

Second, make sure you complete the initial bake before adding sauce and toppings.

And finally, don't go crazy with pizza sauce.

A protein-based crust doesn't behave exactly like traditional bread dough, so drowning it in sauce can make the finished pizza wetter than you want.

What Toppings Work Best?

This is where you can make the recipe fit your own goals and preferences.

Try combinations like:

Classic: mozzarella + pepperoni
Chicken: mozzarella + grilled chicken + peppers + onions
Veggie: mozzarella + mushrooms + peppers + onions + spinach
BBQ: chicken + BBQ sauce + red onion + cheese
Spicy: jalapeños + chicken + mozzarella + hot peppers

You can also add another sprinkle of Pizza Spice over the top before the final bake.

Is High-Protein Pizza Good for Meal Prep?

Yep—and that's one reason we love it.

Once cooked, portion the pizza into individual servings and refrigerate them in airtight containers.

For reheating, an air fryer or oven will generally help restore more texture than a microwave.

It can be an easy way to have something that feels like pizza night sitting in your meal-prep containers instead of eating the same chicken-and-rice combination for the fifth day in a row.

Do You Have to Give Up Regular Pizza to Eat Healthy?

Nope.

And that's not really the point of this recipe.

Regular pizza isn't a “bad” food, and this isn't a “good” pizza designed to replace it forever.

Sometimes you want traditional pizza.

Eat the pizza.

But if pizza is something you love and you're also looking for an easy way to increase your protein intake, this gives you another option.

That's how we prefer to think about nutrition.

Instead of constantly asking:

“What foods do I have to stop eating?”

Try asking:

“How can I make foods I already enjoy work for me more often?”
